Biryani for Eid
- 2 cups basmati rice
- 1 lb boneless chicken, cut into small pieces
- 1/2 cup plain yogurt
- 2 onions, thinly sliced
- 2 tbsp ghee or oil
- 2 tbsp ginger-garlic paste
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1 tbsp biryani masala powder
- Salt to taste
- A pinch of saffron strands soaked in 1/4 cup warm milk
- 2 cups water
- 2 bay leaves
- 4-5 cloves
- 2 cinnamon sticks
- 4-5 green cardamom pods
- 2 black cardamom pods
- Wash and soak the basmati rice in water for 30 minutes.
- In a separate bowl, marinate the chicken with yogurt, turmeric powder, red chili powder, biryani masala powder, and salt. Mix well and let it sit for 30 minutes.
- In a large pot, heat ghee or oil over medium heat and add the sliced onions. Fry until golden brown and crispy, then remove from the pot and set aside.
- In the same pot, add ginger-garlic paste and sauté for a minute. Add the marinated chicken and cook until it is no longer pink.
